ABOUT CANNED CRAB Canned crabmeat comes in multiple grades, but all crab meat (regardless of the grade) has been pasteurized. Within the process of pasteurization, the meat is sealed in cans, heated to 185°, and then quickly cooled to remove any pathogens. Do not go to the tuna fish aisle for canned crab meat.
